Biltong Poke Bowl

Poke bowls are a great healthy treat that you can easily mix and match with different proteins, veg, and flavours. It’s also very quick to put together which makes for a great meal prep during those busy work days. @vickyskitchan made it even easier and tastier by making hers with Ember biltong.

Serves 2

Ingredients:

     Poke Bowl

  • 1 pack of Ember Biltong
  • 1 portion Brown rice (or any carb)
  • ½ Cucumber, diced
  • 1 Avocado, sliced
  • 2 Radishes, sliced
  • ½ Carrot, sliced or curls
  • ¼ Red cabbage, chopped
  • Sweetcorn (measurements to your liking)
  • Edamame beans (measurements to your liking)
  • Chilli pepper, sliced (measurements to your liking)
  • Dash of sesame seeds

     Spicy dressing

  • 3 tbsp Sriracha sauce
  • 2 tbsp Kewpie mayonnaise
  • 2 tbsp Soy sauce
  • Soy dressing
  • 4 tbsp Soy sauce
  • 1 tbsp Sesame oil

Instructions:

  1. Cook the rice in a rice cooker (or how you would usually)
  2. Whilst the rice is cooking, prepare and cut your vegetables
  3. Prepare your dressing choice by mixing all the ingredients in a bowl
  4. Once rice is cooked, assemble the poke bowl with the rice topped with your prepared vegetables and favourite Ember biltong flavour
  5. Drizzle with dressing of your choice
